Miss Lori wants you to win the MAX for your teacher

That?s why OfficeMax joined with Adopt-A-Classroom to create ?A Day Made Better??a national cause event founded to erase teacher-funded classrooms. This year, ?A Day Made Better? will take place on October 6 where 1,000 teachers will be surprised in their classrooms each with $1,000 worth of essential supplies from OfficeMax. That?s more than one million dollars donated to help teachers! Principals at needy schools nominated the teachers for demonstrating dedication, innovation, and passion.

To pay-it-forward, OfficeMax and Mom It Forward have teamed up to create awareness about the issue of teacher-funded classrooms and to give you the opportunity to get involved and help a teacher in your community on behalf of the ?A Day Made Better.? Together they created a team of moms across the country to help get the word out to you. MAX moms are some of the most reliable Mommy blogger communicators out there. TOGETHER we are blazing across the social media airways to light a fire of chage and eradicate teacher funded classrooms.

Miss Lori dines at Cibo Matto with Kathy Kaehler…near Mayor Daley

Yesterday I had the great fortune to have dinner with Kathy Kaehler. And guess who ran into? Mayor Daley and his phenomenal wife Maggie! Wait, let me back up to the beginning.

Sunday night I got a message from my good friend Hope Bertram of Windy City Social about an opportunity to have a guest blogger on my site, Kathy Kaehler, Personal Trainer to the stars. I said, “Of course! What is she in town for?” Kathy was coming to town with Healthy One’s deli meats to talk about her Sunday Set Up and, of course, fitness.

Fast forward to Tuesday. After getting kids to school, talking with the principal, emailing about my “Taking the Stage for Teachers” Office Max Mom event September 30th, (don’t worry I will come back to that!), auditioning for voiceovers for Laughing Cow and GetGo, having a phone meeting with Centered Chef, Chef Jill, I made my way alllllll the way to Lockport’s Jewel Osco to meet Kathy Kaehler. (Whew!! Good thing I wore my running shoes.)

Miss Lori introduces you to ECOChallenge2020 in a show of peace

September 21st is The United Nations International Day of Peace. What does that mean to you? For Jeannette Kravitz founder, director and CEO of Peace Journey and Juvenesse Spa, it means ?investing in how we can positively influence children?s choices in the food they eat.? Which is exactly what she has been doing for years with her foundation Peace Journey.

Peace Journey sponsors groups of students and teachers on trips to select foreign countries on a mission of cultural exploration. Students travel to each culture, opening doors to communication and lasting friendships online and offline. As youth learn and share knowledge with other cultures online, in video/documentaries, and work hands-on with land nurturers and stakeholders, a baseline of change is created. Youth build on ideas like commodity exchanges; micro-lending to help women farmers, all while building schools and gardens, engaging with stakeholders, peacemakers, foreign governments and building an international co-op of healthy lifestyles.

Peace Journey is celebrating its? 10 Year Anniversary this year. In honor of that Jeannette Kravitz is launching ECOChallenge2020, sponsored in part by PeaceSPA product line, to make a positive impact on youth and health care in America. ECOChallenge2020 creates a 2010 to 2020 year commitment to creating a culture of healthier kids who learn how to respect and be mindful of what they put in their bodies, as well as learn the best practices for eating and growing healthy foods, anywhere in the world.

The ECOChallenge2020 launch event will take place Today, September 21st, on The United Nations International Day of Peace at the Juvennes Spa, 520 West Erie, Suite 340, from 5:30 p.m. – 8:30 p.m.

Miss Lori says Chicken Nuggets are not a food group!

Chicken Nuggets are not a food group! You laugh, but there are some kids out there who believe it to be true. Not so far fetched since until recently ketchup was designated a vegetable in school lunches. Yeah, not so funny now is it. As we debate like maniacs the question of health care in this country let?s pause for a moment and look at the things that we could be doing better so that we are ore healthy as a nation in general, and thus not in need of so much medical intervention. Chief in point would be our food. From a country that was founded on the backs of farmers we have turned into a nation of processing. There are children in the United States who do not have fresh vegetables and fruit in their diet regularly. ?How can that be,? you ask?. Well, frankly because we let it happen. Particularly by allowing our school lunches to run the gamut from bad to awful.

But never fear we can still do something to change it. The Healthy Schools Campaign based in Chicago, as well as Chef Ann the Renegade Lunch Lady, LaDonna Redmond of the Institute for Community Resource, Representatives of Chartwells Thompson Hospitality and countless others are working very hard to turn the tides of unhealthy eating in our school systems. We all gathered at Whole Foods in Chicago recently to put our thoughts on the table and collectively energize our base of support to get pissed off and demand better for our children. (Chef Ann is the one who really wants us to get pissed off. She?s a rabble rouser and I love her for it.) Why now as opposed to tomorrow? Well, because The Child Nutrition Act is up or reauthorization this year. Lawmakers need to hear from us TODAY that we not only want, not only expect, but that we DEMAND that they do more and better for our children when it comes to their food sources.

Miss Lori challenges you to stoke the fire of learning

One week ago today my children and countless numbers of other children across the country returned to school. And on that bustling first day President Obama spoke to all of them, whether they were free to listen or not. He charged our children to do right by their school, their family, but chiefly, to do right by themselves, making the most of the education they have before them. I believe whole heartedly that our children want to be excited about school. They want to achieve. They want to succeed. Children have an innate sense of excitement and anticipation about school on the first day.

It is a flame that is either fanned or extinguished based on how we as a community respond to their quest for the fires of knowledge. So now that we are in the second week of school I challenge you, just as President Obama challenged our kids, to step up, embrace and fulfill your responsibility. The responsibility to your kids, your community, your country. Help kids put education first by supporting schools and their efforts to do right by our children and thus pave the way for a brighter future for us all. Miss Lori’s motto: Brownies with Wheat Germ (Re-Post)

When I was growing up my Mother used to make Brownies with Wheat Germ. She said it was her job to slip in the good stuff when we weren?t looking. The thing is the brownies didn?t taste that much different, but as kids we always over reacted to change, even just the thought of it. But I got used to her ways and grew to really appreciate them. Another specialty of hers was Mama Muffins filled with nutrients. She would send them in care packages to me at college, and my classmates would line up in anticipation of their arrival. Eureka! Now I am the parent. I must admit I am not much of a baker, but I still try and employ my mother?s loving philosophy. I have taken to making smoothies in the morning because I feel like my children?s nutrition is a gamble once they leave my house. I want to put them on their way with as solid a foundation as possible. First I juice veggies including brussel sprouts, kale, spinach, zucchini, bok choy, plus some apples, pear and kiwi. Then I pour the juice into the blender and add frozen berries, flax seed oil and my favorite ingredient, vanilla extract. This is a great way for me to be sure that they have the necessary nutrients to launch into their day. Nevertheless, when they come home at night I have had to be creative with my entrees as well. My son has always been a great, adventurous eater. However, I have very picky eaters in my girls, plus they have inherited their father?s sweet tooth. For quite some time I couldn?t get them to eat their protein. So, I went to my trusty vanilla again and created Cinnamon Chicken. I add cinnamon and vanilla extract, along with soy sauce and some spices, to my stove-top preparation of chicken tenderloins and breasts. It was a hit, Score #1! So, I next tried it with my ground turkey as well. Score # 2. Although after a while they started to tire of this trick, so I next turned to lemon lime and cherry slushy syrup from my Somersize arsenal. The syrup was meant to create slushy?s, but instead I used it as a dipping sauce. Thus I created Cherry and Lemon Lime Chicken. Score # 3! I continue to try and think outside of the box to create dishes that my picky eaters will dive into. My current hunt is for a good fish idea. However, for me the idea of brownies with wheat germ not only relates to food, but to education and entertainment too. Many of the hands on children?s museums we have, particularly here in Chicago. We have The Chicago Children?s Museum and The Kohl Children?s Museum. Their exhibits are meant to excite and delight while simultaneously inspiring and instigating. Through play in zones such as water, construction, general store, baby and music rooms to name a few, our children are learning important skills in math, science, language arts and social studies. All of this play also bolsters socio-emotional development on top of curriculum enhancement, preparing our children for school and life. I personally try to employ this methodology with the media that I create. For example, my song AWESOME 8! is a fun dance tune, but underneath the rhythmic beat it contains an important message about healthy choices for growing kids. As a parent I look for that kind of entertainment for my kids. I see it in shows like Word World, Fetch with Ruff Ruffman, Cyberchase, Pinky Dinky Do and Cake to name a few. But kids need more. They need more outlets for nutrition. SO I continue my work and my search. With Mother?s Day approaching this weekend I reflect upon my role and my role model. I am so thankful for my mother and all that she has done for me over the years, and continues to do for me even today. She gave me a great recipe, not just for healthy foods, but for life. And I continue to feast upon it every day. It has fed me since infancy, and now it feeds my children, and hopefully all children that come in contact with me for years to come. Miss Lori gets berrylicious with Driscoll’s Berries and Chef Jill

Last month my kids and I were invited to attend a delicious event with Chef Jill. She was conducting a Mommy and Me cooking class using Driscoll?s Berries. (Well, twist my arm!) SO, I took my three children, two neighborhood children and a friend with her two children and headed off to Macy?s Culinary Institute downtown. What a space! Such a beautiful and sparkling kitchen environment. We arrived to find Chef Jill and her assistant Miss truly along with a spread of the most colorful berries. The berries were calling to us from the moment we walked in the door. There were plump blueberries, luscious strawberries, bulging raspberries and succulent blackberries all for the taking. My kids dove right in and started lip smacking their way through the tray. When we were finally able to get them to come up for air Chef Jill called us over to start cooking! Over the course of the two hours the kids got wrist deep into making Raspberry Crumble, Strawberry Jam, Blueberry Smoothies and Berry Yogurt Parfaits. Notice I said kids. I had my hands full filming?and eating of course. And let me tell you we ate our way through every step. I did some particular damage with the parfaits. My goodness they were good. I eat all of the ingredients separately in my life frequently, but I had never put them together. It was amazing the burst of flavor that came forth when I did. (Side note, we used Kemps Low Fat Vanilla Yogurt and it tasted like icing! Sooo good!)

Chef Jill and Miss Truly were so great with us. They made the cooking easy, fun and inviting. Nonetheless, what was so amazing about this delicious day was how healthy it was! Berries are referred to as Super Foods by many nutritionists. One cup of Driscoll?s raspberries (or Driscoll?s blackberries) provides a whopping 8 grams of fiber or 32% of what your daily requirement. The pigments that give Driscoll?s berries their red, blue, yellow, black and purple colors are packed with antioxidants. Antioxidants protect our cells from oxidative damage and inflammation, and they have been linked to heart and brain health, supporting a healthy immune system and protection against certain cancers. Berries can stand tall on their own, but like any good ballplayer they also elevate whomever they are paired with. In my favorite yogurt parfait, adding berries to yogurt gives me more vitamins! The vitamin C in berries is helpful for the absorption of calcium. Or take my salad. If I add some berries to it I increase my absorption of iron! Definitely SUPER!
