Miss Lori’s motto: Brownies with Wheat Germ (Re-Post)

When I was growing up my Mother used to make Brownies with Wheat Germ. She said it was her job to slip in the good stuff when we weren?t looking. The thing is the brownies didn?t taste that much different, but as kids we always over reacted to change, even just the thought of it. But I got used to her ways and grew to really appreciate them. Another specialty of hers was Mama Muffins filled with nutrients. She would send them in care packages to me at college, and my classmates would line up in anticipation of their arrival. Eureka! Now I am the parent. I must admit I am not much of a baker, but I still try and employ my mother?s loving philosophy. I have taken to making smoothies in the morning because I feel like my children?s nutrition is a gamble once they leave my house. I want to put them on their way with as solid a foundation as possible. First I juice veggies including brussel sprouts, kale, spinach, zucchini, bok choy, plus some apples, pear and kiwi. Then I pour the juice into the blender and add frozen berries, flax seed oil and my favorite ingredient, vanilla extract. This is a great way for me to be sure that they have the necessary nutrients to launch into their day. Nevertheless, when they come home at night I have had to be creative with my entrees as well. My son has always been a great, adventurous eater. However, I have very picky eaters in my girls, plus they have inherited their father?s sweet tooth. For quite some time I couldn?t get them to eat their protein. So, I went to my trusty vanilla again and created Cinnamon Chicken. I add cinnamon and vanilla extract, along with soy sauce and some spices, to my stove-top preparation of chicken tenderloins and breasts. It was a hit, Score #1! So, I next tried it with my ground turkey as well. Score # 2. Although after a while they started to tire of this trick, so I next turned to lemon lime and cherry slushy syrup from my Somersize arsenal. The syrup was meant to create slushy?s, but instead I used it as a dipping sauce. Thus I created Cherry and Lemon Lime Chicken. Score # 3! I continue to try and think outside of the box to create dishes that my picky eaters will dive into. My current hunt is for a good fish idea. However, for me the idea of brownies with wheat germ not only relates to food, but to education and entertainment too. Many of the hands on children?s museums we have, particularly here in Chicago. We have The Chicago Children?s Museum and The Kohl Children?s Museum. Their exhibits are meant to excite and delight while simultaneously inspiring and instigating. Through play in zones such as water, construction, general store, baby and music rooms to name a few, our children are learning important skills in math, science, language arts and social studies. All of this play also bolsters socio-emotional development on top of curriculum enhancement, preparing our children for school and life. I personally try to employ this methodology with the media that I create. For example, my song AWESOME 8! is a fun dance tune, but underneath the rhythmic beat it contains an important message about healthy choices for growing kids. As a parent I look for that kind of entertainment for my kids. I see it in shows like Word World, Fetch with Ruff Ruffman, Cyberchase, Pinky Dinky Do and Cake to name a few. But kids need more. They need more outlets for nutrition. SO I continue my work and my search. With Mother?s Day approaching this weekend I reflect upon my role and my role model. I am so thankful for my mother and all that she has done for me over the years, and continues to do for me even today. She gave me a great recipe, not just for healthy foods, but for life. And I continue to feast upon it every day. It has fed me since infancy, and now it feeds my children, and hopefully all children that come in contact with me for years to come. Miss Lori gets berrylicious with Driscoll’s Berries and Chef Jill

Last month my kids and I were invited to attend a delicious event with Chef Jill. She was conducting a Mommy and Me cooking class using Driscoll?s Berries. (Well, twist my arm!) SO, I took my three children, two neighborhood children and a friend with her two children and headed off to Macy?s Culinary Institute downtown. What a space! Such a beautiful and sparkling kitchen environment. We arrived to find Chef Jill and her assistant Miss truly along with a spread of the most colorful berries. The berries were calling to us from the moment we walked in the door. There were plump blueberries, luscious strawberries, bulging raspberries and succulent blackberries all for the taking. My kids dove right in and started lip smacking their way through the tray. When we were finally able to get them to come up for air Chef Jill called us over to start cooking! Over the course of the two hours the kids got wrist deep into making Raspberry Crumble, Strawberry Jam, Blueberry Smoothies and Berry Yogurt Parfaits. Notice I said kids. I had my hands full filming?and eating of course. And let me tell you we ate our way through every step. I did some particular damage with the parfaits. My goodness they were good. I eat all of the ingredients separately in my life frequently, but I had never put them together. It was amazing the burst of flavor that came forth when I did. (Side note, we used Kemps Low Fat Vanilla Yogurt and it tasted like icing! Sooo good!)

Chef Jill and Miss Truly were so great with us. They made the cooking easy, fun and inviting. Nonetheless, what was so amazing about this delicious day was how healthy it was! Berries are referred to as Super Foods by many nutritionists. One cup of Driscoll?s raspberries (or Driscoll?s blackberries) provides a whopping 8 grams of fiber or 32% of what your daily requirement. The pigments that give Driscoll?s berries their red, blue, yellow, black and purple colors are packed with antioxidants. Antioxidants protect our cells from oxidative damage and inflammation, and they have been linked to heart and brain health, supporting a healthy immune system and protection against certain cancers. Berries can stand tall on their own, but like any good ballplayer they also elevate whomever they are paired with. In my favorite yogurt parfait, adding berries to yogurt gives me more vitamins! The vitamin C in berries is helpful for the absorption of calcium. Or take my salad. If I add some berries to it I increase my absorption of iron! Definitely SUPER!

Miss Lori says Goodbye to PBS Kids, but not to YOU!

For the last three years I have had the distinct honor to grace your televisions in the mornings as you get ready for school, for work, or a day of play at home. It?s been an absolute treat for me to do what I have been doing, what I have a complete passion for, in front of the viewing public.

So many parents have shared their personal stories with me over the years about how my presentations on PBS Kids helped their children discover talents or make new connections in thought, moving further along the road of discovery. I consider it an absolute privilege being a part of so many ?lightbulb? moments with parents and their young developing children. ?Miss Lori? is not a character that I play, it is the real life that I live. Miss Lori is me, a Mom first and foremost. I use my talents and abilities to help children and their families better their health and wellness, improving their lives overall. It is not only my mission, but my genuine passion.

Last Friday marked my final appearance on the PBS Kids Preschool Block, the series of interstitials in between shows such as Curious George, Super Why, Clifford and more, which I helmed for three years.

Mr. President please reform healthcare. Yes YOU Can!

I am concerned. I am very concerned about the way this healthcare bill is moving, or not moving for that matter. I have been writing very openly and honestly about my family?s healthcare situation. My daughter has been struggling with a mysterious illness that is related to her pancreas being enlarged. We have a large volume of unpaid doctor bills, and that?s with insurance. However, at the end of this month that insurance will expire and we will be all alone in a sea of medical debt without a lifeline to cling to, or a glimpse of a shoreline in the distance. That is why this reform is so important to us right now. That is why it was so important to us during the campaign. As many of my readers know I wasn?t very popular in my own house during the primary elections because I was not on the Obama bandwagon. I voted for Hillary Clinton. I wrote about my reasons back at the time of the vote. It wasn?t that I wasn?t a supporter of Obama, it was that I didn?t feel that he was the right person to deal with our rocky situation at the time. However, when Obama won the nomination I joined the team whole heartedly. I must tell you, I was more than pleasantly surprised at the outcome. I was absolutely bowled over and impressed with the transformation of Barak Obama from candidate to the man who stood before our Nation, and the World, to take the oath of office as the President of the United States. I could feel how much he had learned-see how much he had matured. His resolution at the inauguration was palpable, even through the TV. I felt confident. I felt safe. Even more so, I felt hopeful.

Voices in Our Children’s Heads

As our children head back to school today armed with back packs full of supplies and lunches full of nutritious fuel I have something for you to fill their minds with as well, Advice. While attending the WGN Back to School Fair last month I had the pleasure of talking with long time Illinois Secretary of State Jesse White. He was on hand with his World famous troupe, the Jesse White Tumblers, sharing high flying encouragement about school, and readiness for life.

It is imperative that we not only teach our children to stand tall, but arm them with options for what to do when they fall. For life?s path is filled with bumps and bruises. Our kids need us to teach them first aid so that they can patch themselves up, and hopefully heal stronger from their experiences. I tell my children that everyone loses their way sometimes, it?s the journey back to your path that builds character, resolve and self confidence about your ability to cope. School is important not only for the development of core curriculum skills, but for the development of a child?s socio-emotional being. We send our children to school to learn their ABCs and 123s, but also to learn civility and citizenry; to navigate interpersonal relationships and discover who they are… or at least who they want to be.

So today as our children walk the hallowed halls of learning I hope that there are many voices of wisdom echoing in their heads. For those voices, those little words of wisdom that pinball around all of the other information they take in through friends, television and the internet..those voices of reason and guidance are what we as parents hope will be the loudest when our kids are faced with moral and ethical choices in life.

Miss Lori’s Giving it a WHRRL for #Sitscation ’09!

Recently a friend asked me to check out a new website that helps you create pictorial’s to share on the web. I gave it a Whrrl! Whrrl is the new website that, for free, allows you to upload arrange and captioned stories in pictures to share with family, friends or potential customers depending on your objectives. My first forray was actually in response to a contest sponsered by Whrrl and #Sitscation ’09, a blogging conference taking place in Las Vegas next month. The contest asks participatnts to create a Whrrl story that addresses the topic of luck and your desire to attend #sitscation ’09. (I defintely hit the mark about luck, but I didn’t do so well at addressing specifically why I want to attend the blogging conference. I probably should have been more to the point. Ah Well.) The winner is chosen based upon how many views and comments it receives as well as quality of content. So far I am doing OK, but I could use more comments to improve my standing. (Hint, Hint).

I’m not ready to send my kids back to school!

Well, here we are in the final countdown before school starts and I have a confession to make, (I seem to make a lot of those in this blog, hmmm… ). Anyway, my confession is… I am not ready for my kids to go back to school. I?m not! But it?s purely for selfish reasons, I am enjoying their company. No… I really am. I enjoy the spontaneity of our days. I enjoy the lazy mornings without a starter pistol going off. I enjoy getting to know them better, their unprompted thoughts and ideas.

Although, I didn?t do the things I said I would this Summer. The things that were my plan back in June. I told the kids they would each have to do music lessons and they would also have to an online course of curriculum based enrichment. Plus they would have to write weekly book reports. I also told them we were going to do a money project so they could learn, along with me, about stocks and investing. Ha! We didn?t do a single one of those things. One minute it was the end of school mid June and the next minute it was the last day of August. We simply ran out of time. But the key point is we didn?t waste our time, we simply lived it randomly and with interest.

Last month I had the good fortune to meet Chef Jill Houk at the WGN Back to School Fair. She was thrilled to tell me all about Sara Lee?s mission to get whole grains back into kids? lunches. You all know how important family health is to me so you can understand my interest and excitement. Sara Lee has launched new information on their website, including nutrition tutorials, product background, and a click by click search for the right foods to fit your family?s needs. But the big news is that Sara Lee has designated tomorrow, Thursday September 3rd as ?Take Your Whole Grain Sandwich to School? day!
